Hiking Cookies

What you need when hiking up mountains, sweltering through desserts, battling rainforests or grocery shopping with four kids. It's a respectable sugar rush.

Coconut Oatmeal Raisin Cookie




1 cup butter
1 cup granulated sugar
1 large egg
1 cup plain flour ( all purpose)
1 cup quick cooking oats
3/4 cup coconut flakes
1 tsp baking powder
1tsp baking soda
1 1/2 cups of dried fruit - raisins, sultanas, sour cherries, blueberries, currents, mixed peel, strawberries - whatever is in your cupboard

Heat Oven 350/180

Cream butter and sugar
Beat in the egg
Combine in a separate bowl the dry ingredients
Fold both mixtures together
Drop a tblsp onto a baking tray. Don't pack them too closely as they spread during baking
Bake 12-15 minutes
Whilst warm they are very soft so be careful taking them off the baking tray. Cool them on wire racks ( 5 minutes with sticky fingers, 15 minutes normal)

EAT and ENJOY

PS: I dint have baking powder or soda so I used cake flour instead
I also didn't have granulated white sugar or brown sugar so I used 3/4 cup golden granulated sugar and 3/4 cup dark brown sugar
In the cookies above I used 3/4cup sultanas, a handful of sour cherries, 1/4 dried blueberries and the rest raisins. It's what I had in the cupboard
A cup of butter is about 8oz .
