She's not literally a guinea pig, but she did oblige me and test out my new Cherry and Almond cake recipe. Straight out of the oven, still warm and perfect with a cup of tea.
We have almost completed our blocks and I must say hand sewing makes then quite wonky..lol! So I am currently machine sewing boarders around them to straighten it all out.
200g butter
200g caster sugar
4 eggs
1/2 tsp almond extract ( I didn't have any, still gorgeous)
175g self-raising flour
85g ground almonds
1/2 tsp baking powder
300g glace cherries
100ml milk
2 tblsp flaked almonds
Heat oven to 160C/140c Fan/Gas 3.
Line base and sides of a 20cm deep cake tin.
Beat together the butter and sugar until light and fluffy, beat in eggs one at a time.
Fold in the almond extract, flour, ground almonds and baking powder followed by glace cherries and milk.
Scrape into the prepared tin, scatter over the flaked almonds.
Bake 1 hr - 1 hr 15 mins.
Devour
PS. I halved the cherries and like them sunken but if you wash, dry and roll in flour they will disperse evenly in the cake.
MMMMMmmmmmm, sounds good. My husband loves cherries, I will have to give this a try!

ReplyDeleteMy grandmother used to make a similar cake to this when I visited with her. We would set the table with a pretty cloth, napkins and special teacups. I haven't eaten it in years. Thank you for bringing back some happy memories. Ann :-)
